Raspberry Coconut Brekkie Bake

 

 

Ingredients (Makes 10 Servings) 🍓

  • 440g Coles Low Fat Creamed Cottage Cheese

  • 90g Woolworths Homebrand Rolled Oats

  • 125g Fresh Raspberries

  • 40g Coles Desiccated Coconut

  • 85g Honey (¼ cup)

  • 2 Large Eggs

  • 1 tsp Vanilla Extract

  • 1 tsp Baking Powder

  • ½ tsp Ground Cinnamon

  • ½ tsp Salt

 

 

Directions 👩🏼🍳

  1. Preheat the oven to 175°C and line a baking dish with baking paper.

  2. In a mixing bowl, combine the cottage cheese, eggs, honey and vanilla extract. Stir until smooth and well combined.

  3. Add the rolled oats, desiccated coconut, baking powder, cinnamon and salt. Mix until evenly combined.

  4. Gently fold the raspberries through the mixture.

  5. Pour the mixture into the prepared baking dish and spread evenly.

  6. Bake for 30–35 minutes, or until the top is lightly golden and the centre is set.

  7. Allow the bake to cool before slicing into portions.
