Oat & Date Energy Bar


Ingredients (Makes 10 Servings


🍌 3 Medium Bananas (mashed)


🌾 90g Oats


🌰 25g Almond Flour


🥥 20g Desiccated Coconut (Coles)


💪 30g Uvolve Mix-In Collagen Protein


🥛 180ml So Good Unsweetened Almond Milk (Sanitarium)


🥚 1 Large Egg


1 tsp Baking Powder


🍯 40g Honey


🌰 60g Walnuts (chopped)


🌴 150g Dates (chopped)


🌿 1 tsp Cinnamon




Directions


1. Preheat

Set oven to 170°C (fan-forced).


2. Mash Bananas

In a large mixing bowl, mash the bananas until smooth.


3. Combine Ingredients

Add almond flour, oats, coconut, collagen protein, almond milk, egg, baking powder, chopped dates, walnuts, cinnamon, and honey. Mix until everything is well combined.


4. Bake

Pour the mixture into a lined or greased baking dish. Bake for 35–40 minutes, or until golden and firm to the touch.


5. Cool & Slice

Allow to cool slightly before slicing into 10 bars. Enjoy fresh, or store for later!
