Mini Raspberry Collagen Bounty Bars


Ingredients (Makes 14 Mini Bars)


🍇 175g Frozen Raspberries Unsweetened


🥄 12g Chia Seeds


🍯 35ml Sugar-Free Maple Syrup (Queen)


💗 20g Uvolve Mix-In Collagen Protein


🥥 14ml Coconut Oil (melted)


🥥 100g Fine Desiccated Coconut (McKenzie’s)


🥥 200ml Coconut Cream (Ayam)


🍫 100g 85% Dark Chocolate (Lindt), melted

Directions

  1. Make the Raspberry Jam:

    In a small saucepan, heat raspberries, chia seeds and maple syrup over medium heat until thickened into a jam-like texture.

  2. Add Collagen:

    Remove from heat, stir through the collagen powder, and let the mixture cool completely.

  3. Fill the Moulds:

    Spoon the jam mixture evenly into silicone mini bar moulds.

  4. Make the Coconut Layer:

    Mix melted coconut oil, desiccated coconut and coconut cream in a bowl until combined. Press this coconut mixture firmly on top of the jam layer.

  5. Freeze:

    Freeze the bars for 4 hours or until completely solid.

  6. Chocolate Coating:

    Remove bars from moulds. Dip each one into the melted dark chocolate, let excess drip off, and place on baking paper to set.


 

Storage & Meal Prep Tips


🧊 Freezer: Store in an airtight container for up to 2 months.

⏱️ Best enjoyed straight from the freezer or after sitting at room temp for 1–2 minutes.

❄️ Avoid storing in the fridge — they soften too much.

✂️ Make smaller or larger bars by using different mould sizes.
