Ingredients (Makes 1 Serving) 🌮

  • 280g Carisma Potatoes by Coles
  • 125g Coles 5% Fat Extra Lean Mince Beef
  • 100g Coles Italian Diced Tomatoes
  • 40g Onion, diced
  • 80g Coles Low Fat Creamed Cottage Cheese
  • 1 serving Mingle Medium Taco Mexican Seasoning

 

 

Directions 👩🏼🍳

1. Cut the potatoes into fries.

  • Air fryer: Cook at 180°C for 18 to 22 minutes, shaking halfway
  • Oven: Cook at 200°C for 25 to 30 minutes

Season with salt and paprika.

💡 Tip: Microwave the potatoes first to soften them and speed up cooking.

2. In a pan over medium heat, cook the mince until browned, then add the onion.

3. Stir through the diced tomatoes and taco seasoning. Reduce to low heat and simmer for 5 minutes, or until slightly thickened.

4. Layer the crispy fries in a bowl or plate. Top with the hot Mexi mince and finish with cottage cheese.
