  • 8 Old El Paso Stand ’n Stuff Soft Tortilla Boats
  • 500g Chicken Breast, diced
  • 75g Onion, sliced
  • 200g Capsicum, sliced
  • 120g Lettuce, shredded
  • 70g Edgell Corn Kernels
  • 40g Coles Mexican Seasoning

Directions 👩🏼🍳

  1. Heat a large non-stick pan over medium-high heat. Add the diced chicken and cook for 5 to 7 minutes until lightly golden and cooked through.
  2. Add the onion and capsicum to the pan and cook for 3 to 4 minutes until softened.
  3. Stir through the Mexican seasoning along with 125ml of water. Mix well so the chicken and vegetables are evenly coated. Simmer for 1 to 2 minutes until slightly thickened.
  4. Warm the tortilla boats according to packet instructions.
  5. Fill each tortilla boat with lettuce, the chicken fajita mixture and corn.
  6. Add optional toppings if desired and serve immediately while warm.
