Cottage Cheese, Sweet Potato Steak Bowl with Hot Honey 🥩🍠🔥
Ingredients (Makes 1 Serving) 🥩
- 220g Sweet Potato, diced
- 150g Eye of Round Steak
- 100g Capsicum, sliced
- 60g Coles Low Fat Creamed Cottage Cheese
- 40g Avocado, mashed
- 15g Capilano Hot Chilli Honey
- 1 tbsp Paprika
- Salt and Pepper, to taste

Preheat your air fryer to 200°C. Dice the sweet potato into bite-sized cubes and season lightly with salt. Air fry for 15 to 20 minutes, shaking halfway through, until crispy and golden.
Oven option: Roast at 220°C for around 25 minutes.
- Season the steak generously with salt and pepper. Heat a non-stick pan over medium-high heat and cook for approximately 3 to 4 minutes per side for medium-rare, or to your preferred doneness.
- Remove the steak from the pan and allow it to rest before slicing into thin strips.
- In the same pan, cook the sliced capsicum for 3 to 4 minutes until softened. Add paprika and stir well to coat evenly.
- Assemble the bowl with the roasted sweet potato, sliced steak, capsicum, cottage cheese and mashed avocado.
- Finish with a drizzle of hot chilli honey and serve immediately.
