Directions 👩🏼🍳
- Gently melt the chocolate using the microwave in 20 to 30 second bursts, or over a double boiler until smooth.
- Spoon around three-quarters of the melted chocolate evenly into the base of a muffin tray or silicone moulds. Place in the fridge to set.
- In a large mixing bowl, combine the soy protein crisps, whey protein, peanut butter, maple syrup and coconut oil. Stir until a sticky, well-combined mixture forms.
- Remove the tray from the fridge and press the protein mixture firmly into each mould over the chocolate base.
- Drizzle the remaining chocolate over the top of each cup to seal.
- Refrigerate for at least 1 hour, or until fully set.
Storage & Meal Prep Tips 🧊
- Store in an airtight container in the fridge for up to 1 week.
- Freeze for up to 2 months for longer storage.
- Allow to sit at room temperature for a few minutes before eating for the best texture.
💡 Tip: Use silicone moulds for easy removal and a cleaner finish.
