  • 500g Chicken Breast, sliced
  • 200g Erawan Rice Sticks (Pad Thai Noodles)
  • 1 Large Egg
  • 85g Carrot, sliced
  • 80g Broccoli florets
  • 100g Bok Choy (stems and leaves separated)
  • 30ml Ketjap Manis Sweet Soy Sauce

Directions 👩🏼🍳

 

  1. Place the rice noodles in a heatproof bowl and cover with boiling water. Soak for 6 to 8 minutes, or until softened but still slightly firm. Drain and set aside.
  2. Heat a large wok or non-stick pan over medium-high heat. Add the chicken and cook until browned and cooked through.
  3. Crack in the egg and quickly stir through the chicken until cooked.
  4. Add the carrot, broccoli and bok choy stems. Stir fry for 2 to 3 minutes until just tender but still crisp. Remove everything from the pan.
  5. Add the drained noodles to the pan along with the stir fry sauce and ketjap manis. Toss to coat.
  6. Return the chicken and vegetables to the pan and mix well until heated through.
  7. Serve topped with bok choy leaves, spring onion, bean sprouts and chilli if desired.
