Chicken Honey Garlic & Soy Noodles 🍜🍗
Ingredients (Makes 5 Servings) 🍜
- 500g Chicken Breast, sliced
- 200g Erawan Rice Sticks (Pad Thai Noodles)
- 1 Large Egg
- 85g Carrot, sliced
- 80g Broccoli florets
- 100g Bok Choy (stems and leaves separated)
- 30ml Ketjap Manis Sweet Soy Sauce

Directions 👩🏼🍳
- Place the rice noodles in a heatproof bowl and cover with boiling water. Soak for 6 to 8 minutes, or until softened but still slightly firm. Drain and set aside.
- Heat a large wok or non-stick pan over medium-high heat. Add the chicken and cook until browned and cooked through.
- Crack in the egg and quickly stir through the chicken until cooked.
- Add the carrot, broccoli and bok choy stems. Stir fry for 2 to 3 minutes until just tender but still crisp. Remove everything from the pan.
- Add the drained noodles to the pan along with the stir fry sauce and ketjap manis. Toss to coat.
- Return the chicken and vegetables to the pan and mix well until heated through.
- Serve topped with bok choy leaves, spring onion, bean sprouts and chilli if desired.
