High-Protein Beef & Cheese Enchilada Wraps 🌯🧀🥩
Ingredients (Makes 6 Servings) 🌯
- 500g Coles 5% Fat Extra Lean Beef Mince
- 300g Coles Simply Classic Tomato Pasta Sauce
- 130g Coles 97% Low Fat Creamed Cottage Cheese
- 120g Coles Light Mozzarella Cheese, shredded
- 6 Mission Low GI + Protein Wraps
- 1 tbsp Paprika
- Mixed Herbs, to taste
- Salt and Pepper, to taste

Directions 👩🏼🍳
1. Prepare the Beef Filling
Heat a large non-stick frying pan over medium-high heat. Add the beef mince and cook until browned, breaking it apart with a wooden spoon as it cooks.
Reduce the heat to low and stir through 200g of the tomato pasta sauce. Add the paprika, mixed herbs, salt and pepper. Simmer for 2 to 3 minutes.
Mix through the cottage cheese until fully incorporated and the filling becomes creamy and rich.
2. Assemble the Wraps
Preheat your oven to 180°C and line a baking dish with baking paper or lightly spray with cooking spray.
Lay a protein wrap flat and spread approximately 1 tablespoon of the remaining tomato sauce down the centre.
Sprinkle a small amount of mozzarella over the sauce, then add a generous portion of the beef mixture.
Roll tightly and place seam-side down in the baking dish.
Repeat with the remaining wraps.
3. Bake
Spread the remaining tomato sauce evenly over the tops of the wraps.
Sprinkle over the remaining mozzarella cheese.
Bake for 15 to 20 minutes until the cheese is melted, bubbling and lightly golden.
Serve immediately or portion into containers for meal prep.
